Living off tips is a restaurant owners way of forcing unpaid labor upon servers. No better example of this is restaurants that require side work regardless of whether you have earned any tips during shift. I used to work for the largest restaurant conglomerate in the country (headquartered in Texas- you know who they are). They required over an hour of side work, which included dishwasher and line cook related tasks wholly unrelated to serving. You could not get tipped out until you had a supervisor certify that you had fulfilled your quota of work. This was required even if you were cut and had made zero in tips. Clearly, owners are abusing the tipped min. wage by forcing servers to do unpaid work that is directly related to hourly employees’ responsibilities (busses, dishwashers and cooks). Let’s take back the power from the NRA and reallocate labor costs fairly and equitably.
